Christmas Bear Claws
Preparation time: 10 minutes. Baking time: 15 minutes.

Ingredients
- 1 x Jus-Roll puff pastry sheet
- 200g mincemeat
- 1 small gala apple, peeled, cored and cut into small dice
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1 egg yolk, whisked
- 1 tablespoon caster sugar

Method
- Preheat oven to 200°C / 220°C / Fan / Gas mark 6
- Unroll the puff pastry on a clean, lightly floured work surface.
- Cut in half vertically, creating two halves. Then, cut in half horizontally to make four squares.
- Mix the mincemeat, apple chunks, cinnamon and ginger in a bowl.
- Spoon the mixture onto the pastry, brush the sides of the square with egg wash, fold in half, creating a parcel, and make four cuts with a small sharp knife to create five claws.
- Brush with egg wash and bake in a hot oven for 15 – 20 minutes until golden and crisp.
- Sprinkle the claws with caster sugar when warm.
- Serve warm with whipped cream.
